NEW BRAUNFELS & GRUENE, TEXAS: THE ULTIMATE 3-DAY ITINERARY

Intro

New Braunfels and Gruene are perfect Texas destinations for travelers seeking a blend of natural beauty, rich history, and small-town charm. Nestled in the Texas Hill Country between Austin and San Antonio, these two towns are easier to reach than you might think, just 30 minutes from San Antonio, about an hour from Austin, and a relaxed 3.5-hour drive from Houston, making them an ideal weekend getaway.

John and I have visited this area together several times now, and it’s become one of our favorite places to visit in Texas. Between the outdoor activities, the good food, and the live music around every corner, it’s easy to see why we keep coming back. New Braunfels was founded by German immigrants in 1845, and that heritage still runs deep today, from the Wurstfest celebration to the bakeries, breweries, and architecture scattered throughout downtown. The city’s German roots give it a cultural flavor you won’t find anywhere else in Texas, all while the Guadalupe and Comal Rivers invite you to float, swim, and cool off in that classic Hill Country way.

Just a short 12-minute drive away, Gruene’s historic district feels like stepping back in time, with its iconic dance hall, antique shops, and riverside dining. Whether you’re exploring the Hill Country, sipping local wine, or catching live music in a century-old venue, New Braunfels and Gruene promise an unforgettable Texas experience.

This 3-day itinerary covers some of my favorite spots in New Braunfels and Gruene, perfect for an amazing trip with family or friends.

Where to Stay in New Braunfels & Gruene: Best Hotels, Resorts & Rentals

The Faust Hotel – tucked right in the heart of downtown New Braunfels, within easy walking distance to the town’s best boutique shops, cute cafés, live music, and lively nightlife, no car required. The hotel first opened its doors in October 1929, and that historic charm is still very much alive, from the architecture to the little details throughout the property. It’s recently been renovated, though, so you get the best of both worlds: timeless character paired with rooms that are super comfortable and beautifully decorated. On weekends, guests can sip a cocktail and enjoy live music right on-site at The Magnolia Patio. And don’t skip dinner at the hotel’s own restaurant, Wilhelm & Werner, it was honestly such an elevated experience. The space itself is stunning, and the food was absolutely delicious.

Hacienda del Rio – This riverfront hotel sits just minutes from downtown Gruene, making it a fantastic home base for families. With a sparkling pool, cozy firepits, and a volleyball court on-site, there’s no shortage of ways to stay entertained. The best part? You can go tubing right from the hotel, so there’s no need to drive anywhere else. In the summer months, enjoy live music right on the property, and the on-site club serves up drinks and coffee, making it easy to unwind after a day in the sun.

The Resort at Schlitterbahn – With a variety of rooms, suites, and apartment lofts, this resort makes it incredibly convenient to enjoy everything New Braunfels has to offer, all from one spot. Its ideal location puts you close to top attractions and dining around town, but the real perk is being right next to Schlitterbahn Waterpark, perfect for families who want to make the most of their visit. My family and I have stayed here several times, and we love that we can walk straight into the park without the hassle of parking or shuttles. It’s a stay that combines comfort and convenience, especially if a day (or three) at the waterpark is on your list.

River Run Condos – This spacious condo sleeps up to 6, making it ideal for families or small groups. We loved how it’s tucked right along the Comal River and just a short walk to downtown New Braunfels, the best of both worlds. The space was perfect for our family, and the double balcony with its river view was one of our favorite spots to unwind. It’s also right next to Texas Tubes, so it’s a great home base if tubing is on your agenda. With a pool and BBQ pits right by the river, there’s plenty to do without ever leaving the property. We stayed here for my mom’s birthday, and it’s a memory we still talk about.

Where to Go Tubing in New Braunfels: Comal & Guadalupe Rivers

Tubing is one of the best ways to cool off and soak up the Hill Country sun, and New Braunfels has no shortage of great spots to float. Peak tubing season runs from May through early September, so if you’re visiting during these months, I highly recommend getting there early. Not only will you beat the Texas heat, but you’ll also enjoy the river with far fewer crowds before the tubes start piling up. Tubing the Comal River

For tubing right in town, Texas Tubes is a favorite of ours. John and I love this spot because it’s so conveniently located right in New Braunfels, with free parking that makes the whole experience easy from start to finish. The Comal River here is known for its beautifully clear water, making it one of the most scenic and refreshing places to spend an afternoon.

Floating the Guadalupe River

If you’re up for a short drive, the Guadalupe River is about 20 minutes from downtown New Braunfels and well worth the trip. We love Lone Star Float House and Grill for this, they have an onsite restaurant with gorgeous river views, and their burgers are the perfect way to refuel before or after your float. Bonus: the drive out to the Guadalupe is stunning, so take your time and enjoy the scenery along the way.

Day 1 in Gruene, Texas: Historic Dining, Shopping & Live Music Itinerary

11 a.m. Grab a delicious breakfast at the historic Gristmill River Restaurant & Bar. This was once a cotton gin in 1878. A part of the original brick boiler room can still be view when you arrive to the restaurant. My favorite thing to order is sweet tea and the chicken friend steak. This is one of my favorite restaurants in the Texas Hill Country because it has a beautiful outdoor patio with views of the Guadalupe River. I recommend you to arrive right when they open, because it gets packed very fast and the wait can be long.

1 p.m. Walk around and visit the local shops around downtown Gruene. Some of my favorite stores are the Gruene General Store (which has been in business since 1878), Rusty bugs & Roosters, The Best Li’l Bath Haus, Simply Detailed Boutique, Gruene Antique Company and The Pomegranate. If you want something refreshing grab a latte or smoothie from Gruene Coffee Haus, I love the unique flavors they have. Don’t miss taking a picture by the George Strait mural next to the coffee shop.

3 p.m. As you shop around, stop by The Grapevine for a glass of wine and relax on the patio as you listen to live music. Another place to go wine tasting just within walking distance is Winery on the Gruene. Their wine tasting is not that expensive and the staff is always very friendly.

4 p.m. If you’re getting hungry, stop by Gruene River Grill. This spot boasts gorgeous river views paired with delicious comfort food. I highly recommend trying the meatloaf or the baby back ribs.

7 p.m. Grab a drink and listen to live music at Gruene Grove, a family-friendly beer garden with a chill, laid-back atmosphere. The patio is spacious and shaded by pecan trees, making it the perfect spot to relax. Before you settle in, grab some homemade ice cream from Rhea’s Ice Cream. I love their unique flavors, and cookies and coffee is hands-down my favorite. Enjoy your ice cream while listening to live music at Gruene Grove, and don’t miss checking out the Goodwins Underground Speakeasy while you’re there.

8 p.m. If you start to get hungry grab a delicious pizza from Inferno’s Wood Fire Oven & Spirits. I love the atmosphere of this place because it is very family-friendly and lively. You can enjoy live music on the patio during the weekends.

9 p.m. Walk over to the Texas’ oldest continually operating and most famous dance hall, Gruene Hall. Listen to live local bands and two-step the night away. This dance hall was built in 1878 and not much of the design of the place has change since then. When you visit this place it feels like you are stepping back in time.

Day 2 in New Braunfels, Texas: German Food, Tubing & Live Music Itinerary

9 a.m. Every time I visit New Braunfels, I make it a point to stop by Krause’s Cafe for breakfast or brunch. Between the live music, tasty German food, and great beer selection, it’s the perfect way to start the day. I also love the friendly, welcoming atmosphere, it’s the kind of place that makes you want to linger a little longer with friends or family. Krause’s Cafe has been serving up German comfort food since 1959, making it a true New Braunfels staple.

11 a.m. If you’re visiting on a Saturday, don’t miss the New Braunfels Farmers Market, held right next to Krause’s Cafe from 9 a.m. to 1 p.m. I love shopping here because you never know what unique finds you’ll come across, from specialty tea blends to handmade soaps and everything in between. It’s a great way to spend an hour browsing local goods before continuing on with your day.

1 p.m. Now it’s time to hit the water and go tubing down the river (see my tubing recommendations above for the best spots). If you’d rather take it easy, head to downtown New Braunfels and spend the afternoon browsing the local boutique shops. While you’re there, grab a pastry from Naegelin’s German Bakery, the oldest bakery in Texas and a delicious nod to the town’s German roots. And if you’re craving something sweet later on, stop by Scoop Street, an ice cream shop known for its creative flavors. I tried the Honey Chocolate Lavender and absolutely loved it, it’s unlike anything you’ll find elsewhere.

3 p.m. When hunger strikes, head to Black’s Barbecue New Braunfels for some seriously good Texas BBQ. This family-run Texas institution has been serving up smoked meats since 1932, and it’s one of my favorite BBQ spots in town. The brisket is incredibly tender and the reason I keep coming back.

5 p.m. Head back to your hotel to relax and recharge with a nap before a fun night out in downtown New Braunfels.

7 p.m. Start your evening with a delicious German dinner at Alpine Haus Restaurant, one of John’s and my favorite spots in town. The portions are generous, so if you don’t have a big appetite, consider grabbing an appetizer and sharing an entrée to save room for dessert. Sometimes they even have live German music playing, adding to the charm. Set inside a historic home, the space feels warm and cozy, and honestly, everything on the menu is amazing. I highly recommend making reservations, as it tends to fill up quickly.

8: 30 p.m. to mindnight For live music, you’ve got a few great options depending on the vibe you’re after. Cowboys & Cadillacs Upscale Dining & Rooftop Bar offers a slightly more upscale experience, with a beautiful rooftop overlooking downtown New Braunfels. If you’re in the mood for a piano bar experience, check out Moonshine & Ale, it’s always a blast, and you’ll leave without a voice from singing along to your favorite songs all night. For something more laid-back, head to Pour Haus, one of my favorite bars in town thanks to its spacious outdoor patio and live music seven nights a week.

Day 3 in New Braunfels, Texas: Coffee, Hiking & River Fun Itinerary

9 a.m. Start your morning with coffee and pastries at 2tarts Bakery, a charming café in downtown New Braunfels. With a tempting array of pastries and an adorable little shop inside, it’s the perfect way to ease into the day.

10 a.m. Head to the Panther Canyon Nature Trail, an easy 1.2-mile hike where you might get lucky and spot deer along the way. If you’re up for more of a challenge, try the Rim Trail instead, which features a steeper incline and a dramatic drop-off on one side for those wanting a bit more adventure.

11 a.m. After hiking, head over to Landa Park. This beautiful park is filled with picnic tables, an aquatic center, and incredible river scenery around every corner. Bring a blanket and lay out on the grass to relax as you watch the birds and squirrels go about their day. And don’t forget to hop on the park train, John and I rode it and loved every minute. It takes you on a scenic loop all around the park, offering a fun and relaxing way to see it all.

12:30 p.m. Enjoy a delicious lunch at Buttermilk Café. If you’re in the mood for breakfast, the Café Breakfast is a classic you can’t go wrong with, and if you’re leaning toward lunch, the Country Fried Steak is a must-try. One of the things I loved most about this place was the atmosphere, it felt warm and cozy, and the service was excellent from start to finish.

2 p.m. If you’re still craving some time in the water before heading home, stop by River Acres Park for a relaxing dip. It has a shallow section that’s perfect for simply wading and unwinding, making it a great spot if you’re traveling with kids.

5 p.m. Head home after a fun weekend in the Texas Hill Country!

El espacio fue perfecto para nuestra familia, y el balcón doble con vista al río fue uno de nuestros lugares favoritos para relajarnos. También está justo al lado de Texas Tubes, así que es una excelente opción si hacer tubing está en tus planes. Con una piscina y áreas para hacer BBQ junto al río, hay mucho que hacer sin siquiera tener que salir de la propiedad. Si quieres hacer tubing directamente en New Braunfels, Texas Tubes es uno de nuestros lugares favoritos. A John y a mí nos encanta este lugar porque está convenientemente ubicado en New Braunfels y cuenta con estacionamiento gratuito, lo que hace que toda la experiencia sea mucho más fácil de principio a fin. El río Comal es conocido por sus aguas cristalinas, lo que lo convierte en uno de los lugares más bonitos y refrescantes para pasar una tarde.

Flotando por el río Guadalupe

Si estás dispuesto a manejar un poco, el río Guadalupe está a unos 20 minutos del centro de New Braunfels y definitivamente vale la pena. Antes de instalarte, pasa por Rhea’s Ice Cream por un helado casero. Me encantan sus sabores únicos, y el de cookies and coffee es, sin duda, mi favorito. Disfruta tu helado mientras escuchas música en vivo en Gruene Grove y no te pierdas Goodwins Underground Speakeasy mientras estés ahí.

8 p.m. Si te vuelve a dar hambre, disfruta de una deliciosa pizza en Inferno’s Wood Fire Oven & Spirits. Me encanta el ambiente de este lugar porque es muy familiar y animado. Los fines de semana puedes disfrutar de música en vivo en el patio.

9 p.m. Camina hasta Gruene Hall, el salón de baile más antiguo de Texas que continúa en funcionamiento y uno de los más famosos del estado. Escucha bandas locales en vivo y baila two-step toda la noche. Este salón fue construido en 1878 y gran parte de su diseño se ha mantenido prácticamente igual desde entonces. Cuando visitas este lugar, realmente se siente como viajar en el tiempo.

Día 2 en New Braunfels, Texas: Comida alemana, tubing y música en vivo

9 a.m. Cada vez que visito New Braunfels, me aseguro de pasar por Krause’s Cafe para desayunar o disfrutar de un brunch. Entre la música en vivo, la deliciosa comida alemana y su gran selección de cervezas, es la manera perfecta de comenzar el día. También me encanta el ambiente amable y acogedor; es de esos lugares donde quieres quedarte un poquito más disfrutando con amigos o familia. Krause’s Cafe ha servido comida alemana reconfortante desde 1959, convirtiéndose en todo un clásico de New Braunfels.

11 a.m. Si visitas New Braunfels un sábado, no te pierdas el New Braunfels Farmers Market, que se encuentra justo al lado de Krause’s Cafe y está abierto de 9 a.m. a 1 p.m. Me encanta comprar aquí porque nunca sabes qué cosas únicas vas a encontrar, desde mezclas de té especiales hasta jabones hechos a mano y mucho más. Es una excelente manera de pasar una hora recorriendo los productos locales antes de continuar con tu día.

Si prefieres algo más tranquilo, dirígete al centro de New Braunfels y pasa la tarde recorriendo las boutiques locales. Mientras estés por ahí, compra un pan dulce en Naegelin’s German Bakery, la panadería más antigua de Texas y una deliciosa muestra de las raíces alemanas de la ciudad. Y si más tarde se te antoja algo dulce, haz una parada en Scoop Street, una heladería conocida por sus sabores creativos. Probé el de Honey Chocolate Lavender y me encantó; es un sabor que difícilmente encontrarás en otro lugar.

3 p.m. Cuando te dé hambre, dirígete a Black’s Barbecue New Braunfels para disfrutar de un auténtico BBQ texano. Esta institución familiar de Texas ha servido carnes ahumadas desde 1932 y es uno de mis lugares favoritos de BBQ en la ciudad. El brisket es increíblemente suave y es una de las razones por las que siempre regreso.

5 p.m. Regresa a tu hotel para relajarte y recargar energías con una siesta antes de salir a disfrutar de la noche en el centro de New Braunfels.

7 p.m. Comienza la noche con una deliciosa cena alemana en Alpine Haus Restaurant, uno de los lugares favoritos de John y mío en la ciudad. Las porciones son bastante grandes, así que si no tienes mucha hambre, considera pedir un aperitivo y compartir un plato fuerte para dejar espacio para el postre. A veces también tienen música alemana en vivo, lo que le da todavía más encanto al lugar. El restaurante está ubicado dentro de una casa histórica, por lo que el espacio se siente cálido y acogedor. Y, sinceramente, todo lo que tienen en el menú es delicioso. Te recomiendo hacer reservación, ya que suele llenarse rápidamente.

8:30 p.m. a medianoche Para disfrutar de música en vivo, tienes varias opciones dependiendo del ambiente que estés buscando. Cowboys & Cadillacs Upscale Dining & Rooftop Bar ofrece una experiencia un poco más sofisticada, con un hermoso rooftop con vistas al centro de New Braunfels. Si quieres disfrutar de la experiencia de un piano bar, visita Moonshine & Ale. Siempre es muy divertido, y seguramente terminarás sin voz de tanto cantar tus canciones favoritas durante toda la noche. Para algo más relajado, dirígete a Pour Haus, uno de mis bares favoritos de la ciudad gracias a su amplio patio al aire libre y música en vivo los siete días de la semana.

Día 3 en New Braunfels, Texas: Itinerario de café, senderismo y diversión en el río

9 a.m. Comienza la mañana con un café y unos deliciosos panecitos en 2tarts Bakery, una encantadora cafetería en el centro de New Braunfels. Con una tentadora variedad de repostería y una pequeña tienda adorable en su interior, es el lugar perfecto para comenzar el día con calma.

10 a.m. Dirígete a Panther Canyon Nature Trail, un sendero fácil de 1.2 millas donde quizá tengas suerte y puedas ver venados durante el recorrido. Si buscas algo un poco más desafiante, prueba Rim Trail, que cuenta con una subida más pronunciada y un impresionante desnivel en uno de sus lados, perfecto si quieres agregar un poco más de aventura al día.

11 a.m. Después de hacer senderismo, dirígete a Landa Park. Este hermoso parque cuenta con mesas de picnic, un centro acuático y paisajes increíbles del río a cada paso. Lleva una manta y relájate sobre el césped mientras observas a los pájaros y las ardillas disfrutar de su día. Y no te olvides de subirte al tren del parque. John y yo lo hicimos y nos encantó. El recorrido da una vuelta panorámica por todo el parque, ofreciendo una forma divertida y relajada de conocerlo.

12:30 p.m. Disfruta de un delicioso almuerzo en Buttermilk Café. Si tienes antojo de desayuno, el Café Breakfast es un clásico con el que no puedes equivocarte, y si prefieres algo más de comida, el Country Fried Steak es una excelente opción. Una de las cosas que más me gustó de este lugar fue el ambiente: se sentía cálido y acogedor, y el servicio fue excelente de principio a fin.

2 p.m. Si todavía tienes ganas de disfrutar un poco más del agua antes de regresar a casa, haz una parada en River Acres Park para darte un chapuzón y relajarte. Cuenta con una zona poco profunda perfecta para caminar dentro del agua y descansar, lo que lo convierte en un excelente lugar si viajas con niños.

5 p.m. ¡Hora de regresar a casa después de disfrutar de un increíble fin de semana en Texas Hill Country!

Resumen

New Braunfels y Gruene realmente tienen algo para todos: desde hacer tubing por los ríos Comal y Guadalupe, hasta disfrutar de su herencia y gastronomía alemana, o bailar toda la noche en el salón de baile más antiguo de Texas. Ya sea que viajes con tu familia, amigos o esa persona especial, estos dos pueblos ofrecen la combinación perfecta de aventuras al aire libre, comida deliciosa y encanto de pueblo pequeño que hará que estés planeando tu próxima visita antes de siquiera irte.
